SEASON: In a small mixing bowl, combine salt, pepper, rosemary, thyme, granulated onion, and garlic. Mix to combine and thoroughly coat the roast with seasoning.
ROAST: Preheat oven to 450°F (232°C). Place the seasoned eye of round on a roasting pan fitted with a wire rack. Oven sear the roast for 15 minutes, then reduce the oven temperature to 325°F (163°C) and roast for an additional 1 hour and 15 minutes, or until the roast reaches an internal temperature of 115°F (46°C). Allow the roast to rest at room temperature for 30 minutes before refrigerating, uncovered, overnight.
SLICE: Place the chilled roast on a large cutting board and slice as thin as possible to make deli-style roast beef slices. Portion and refrigerate or freeze.
