Beef and Mushroom Ravioli is a tasty dish that's easy to prepare. It's also great for reheating – for times when you'd rather be out than in.
Tips
Don't settle for reheated leftovers. Consider these alternatives to eliminate the ho-hum re-heat repeat
- Leftover steak
- Fajitas, quesadilla—Fill your tortilla with steak strips, sautéed onion and peppers, cheese, and tomato
- Salad—top mixed greens with steak strips, blue cheese, red onion, strawberries and a balsamic vinaigrette
- Wrap, panini or sandwich—artisan breads, with brie, gouda, smoked provolone, sharp cheddar (the list can go on!), arugula, spinach, slices of apple
- Leftover roast (prepare a 5-lb. instead of a 2-lb. roast)
- Skillet pot pie—Sauté vegetables, chunks of leftover roast, package brown gravy mix, 1/2 cup water and red wine and simmer until gravy thickens, add fresh parsley
- Pasta—substitute slices of the roast in the Beijing salad
- Soup—classic vegetable soup with shredded beef
- Leftover meatloaf
